Thai Shrimp with BroccoSprouts

Serves 4

As a flavor profile much in demand, Thai foods have the essence of freshness with just enough different seasonings to be exotic. This simple recipe can be prepared in minutes. For a complete meal is does well over a bed of rice or noodles.

  • 1 teaspoon canola or grapeseed oil
  • 1 1/4 pounds jumbo shrimp, shell on
  • 1 large yellow or red bell pepper, cut into thin strips
  • 1/2 pound green beans cut into thin slices
  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh ginger
  • 2 teaspoons Asian fish sauce
  • 1 teaspoon hot pepper sauce (or sambal oelek, found in Asian markets)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons coconut milk
  • 2 teaspoons brown sugar
  • 1 cup chopped BroccoSprouts
  • 1/4 cup minced fresh basil
  • 1/2 cup thinly sliced scallions

In a large skillet heat the oil over medium high heat. when hot add the shrimp and sauté until they turn pink on each side. Remove with a slotted spoon and hold.

In the same pan add the bell pepper and green beans. Sauté for 4 minutes. Add the remaining ingredients up to and including the brown sugar. Bring to a boil and then simmer until green beans are tender. Stir in the BroccoSprouts, basil and scallions. Return the shrimp to the pan and heat for 1 minute. Serve immediately.
